Our Story
Everything has a story and like many things in life,
WildRoots starts with a love story.
Eleven years ago (2013), in the bustling kitchen of a restaurant in St. Albert, two young cooks fell madly in love. Just a few months into their romance, Tony embarked on a culinary adventure to Europe, and Chelsea eagerly invited herself along—after all, who wouldn’t want to enjoy the best food Europe has to offer?
Upon returning, they teamed up at a local tapas bar, where they spent five incredible years working side by side, nurturing both their culinary skills and their bond. Fast forward to today (2024), and their five-year wedding anniversary gift to each other is the realization of their wildest dream: opening a restaurant together.
At WildRoots Bistro, Chelsea & Tony can’t wait to share their wild passion for adventure, food, cocktails, and coffee while they grow their roots within their beloved community.

I have been managing hospitality teams all over Edmonton; the Riverhawk concessions, the Sherwood Park Curling Club and Rad Torque Raceway. In my free time, I have been working on my gardening, foraging, barista and bartending skills. I love using the preserves and local ingredients to make fun cocktails, mocktails and coffees! I cannot wait to make you your new favourite bespoke drink!

Previously working at Woodwork and Bar Clementine I honed my skills cooking over natural wood live fire and grew a love for cocktails. Working at Restaurant Yarrow I greatly expanded my service and story telling skills while diving deep into the world of natural wine! Finally having spent the last year opening a fine dining restaurant from the ground up in a multi departmental site.
